Stroopwafel Muffins
Ingredients
- 40 ml - Hollandse Stroopwafellikeur
- 300 grams - Wheat flour
- 250 grams - Semi-skimmed milk
- 150 grams - Fine caster sugar
- 75 grams - Unsalted butter
- 8 grams - Baking powder
- 1 teaspoon - Vanilla flavouring
- 2 - Eggs
- 1 pinch - Salt
- 1 small pack - Stroopwafels

Preparation

Preheat
Preheat the oven to 175 °C and grease the muffin tin.

Dry mixture
Sift the flour and mix in a large bowl together with the baking powder, the sugar and the salt.

Melt butter
Melt the butter in a saucepan over low heat and take it off the heat immediately.

Wet mixture
In a new bowl, whisk the eggs with the milk, the vanilla flavouring and the Stroopwafellikeur and add the melted butter little by little.

Mix
Add the wet mixture to the dry mixture and fold together. Add the stroopwafels in small pieces.

Bake
Divide the batter over the muffin moulds and bake in the middle of the oven for 25 min. until browned and done. Let cool for 30 min.
